Asparagus spears rolled in Parma Ham - fried and topped with Parmesan shavings
Ingredients:
24 asparagus
8 slices of Parma Ham
3tbls Italian olive oil
Italian Extra virgin olive oil
100g Block of Parmesan cheese (for shaving)
Salt and pepper to taste
Preparation:
Par-boil the asparagus until al dente. Allow to cool in cold water. Drain and dry them in a cloth.
Wrap 1 slice of Parma Ham around the bottom of 3 asparagus spears. Once all the spears are prepared, heat the olive oil in a large frying pan and gently fry the asparagus for approx. 2 minutes. Season with salt and pepper.
Serve 2 wrapped asparagus crossed over in the middle of a plate, drizzle with extra virgin olive oil and shaved parmesan. Serve immediately.
