Main Courses

These pasta and main meal dishes are real D’Acampo family favourites. They’re either recipes passed down through the generations or ones that my whole family just love to eat. Classic pasta dishes that are ready to serve, or showstopping dishes that just need pasta or bread to complete the meal.

My Nonno's Cannelloni

This is made to the exact recipe my Nonno Giovanni made over 20 years ago. Baked pasta filled with spinach, peppery rocket and creamy ricotta cheese, a winning flavour combination.

My Mamma's Lasagne

Every Italian region has its own way of making Ragu. The Campanian way would see my mother starting at 7am in the morning, as it takes 3 hours of slow cooking to perfect the sauce, which is why I just had to have this dish in the range. I mean who has three hours to make sauce in this day and age? We’ve done all the hard work so you don’t have to as My Mamma’s lasagne is the ultimate minimum effort, maximum effort dish.

Aubergine Parmigiana

This is an iconic Italian dish and one that everyone must try at least once. It’s not just for vegetarians but is packed with delicious thinly sliced fried aubergines and layered with oozing mozzarella, exactly the way my Mamma used to make it. And this dish is completely vegetarian, even the cheese, so it’s perfect for meat-eaters and vegetarians alike.

Mia's Meatballs

This is a firm favourite in our household. My daughter Mia loves these so much that she prefers them to chocolate, now that’s a chef’s daughter! Succulent beef meatballs topped with a sweet tomato sauce and Grana Padano cheese, I guarantee they will soon be your favourite as well. Serve with plain boiled rice, or as Mia eats it, with crusty bread.

Arancine Al Forno

Every Sunday my father used to take me around the town of Torre del Greco where I was born. We used to do our weekly shop in the markets and we would eat this in the middle of the road or sitting on the step of a church. Forget about burgers and hotdogs, this is the ultimate Neapolitan street food.

Cannelloni Ragù

A great baked pasta dish that has been in my family for generations. My mother first showed me how to make it when I was about 10 years old and today remains a family favourite in the D’Acampo’s household. Fantastic served with a cheeky glass of Italian red wine.

Maccheroni 4 Cheeses

My son Rocco doesn’t really like milk, so when making a traditional maccheroni cheese, I add in as much calcium as possible with many different cheeses. The result? A fantastic rich sauce loved by the whole family.

Ravioli Spinach & Ricotta

Ravioli are popular all over Italy, stuffed with a variety of different ingredients depending on the region and the season. Spinach & ricotta ravioli is the most traditional and well known of all, I have never met anyone who doesn’t like this dish. What’s more it definitely gets a thumbs up from my children.
