My Nonno's Cannelloni

This is made to the exact recipe my Nonno Giovanni made over 20 years ago. Baked pasta filled with spinach, peppery rocket and creamy ricotta cheese, a winning flavour combination.

My Mamma's Lasagne

Every Italian region has its own way of making Ragu. The Campanian way would see my mother starting at 7am in the morning, as it takes 3 hours of slow cooking to perfect the sauce, which is why I just had to have this dish in the range. I mean who has three hours to make sauce in this day and age? We’ve done all the hard work so you don’t have to as My Mamma’s lasagne is the ultimate minimum effort, maximum effort dish.

Vegetable Lasagne

If you think vegetables are boring, then this is the dish that proves you wrong. Trust me. This medley of Mediterranean vegetables; tomatoes, courgettes, aubergine and peppers are layered between béchamel sauce, just like my Mamma used to make. And this dish is completely vegetarian, even the cheese, so it’s perfect for meat-eaters and vegetarians alike.

Chicken Cacciatore

Cacciatore means ‘Hunter” in Italy and this chicken dish (similar to the English chicken casserole) is made by Italian families at least once a week. The smoky pancetta, tomato and white wine sauce beautifully complements the chicken and is the perfect any day of the week supper. Don’t forget to serve with some crusty bread, to mop up the delicious sauce.

Pollo Margharita

Every Neapolitan loves Margherita, it’s the sauce of the region, made famous by our pizza. So I decided to experiment with it, and in this dish have come up with a way to use it to top succulent roasted chicken so I can get my Margherita fix.

Aubergine Parmigiana

This is an iconic Italian dish and one that everyone must try at least once. It’s not just for vegetarians but is packed with delicious thinly sliced fried aubergines and layered with oozing mozzarella, exactly the way my Mamma used to make it. And this dish is completely vegetarian, even the cheese, so it’s perfect for meat-eaters and vegetarians alike.

Mia's Meatballs

This is a firm favourite in our household. My daughter Mia loves these so much that she prefers them to chocolate, now that’s a chef’s daughter! Succulent beef meatballs topped with a sweet tomato sauce and Grana Padano cheese, I guarantee they will soon be your favourite as well. Serve with plain boiled rice, or as Mia eats it, with crusty bread.
