Sauces for Pasta

Growing up on the Amalfi coast, we were never short of fantastic fresh seafood. So, I’ve re-created three of the coastline’s most iconic sauces, so you can enjoy the taste of the Mediterranean whenever you want to.

Spicy Mussels with White wine, tomatoes and chilli

This is a beautiful looking dish, a treat for your eyes as well as your taste buds, mussels cooked in a white wine and tomato sauce, warmed through with a hint of chilli. Do not sprinkle cheese on this dish, the flavours are perfectly balanced and do not need anything extra. My suggestion is to serve this sauce with your favourite long pasta. And always mix the pasta in with the sauce, not the other way round!

Clams with garlic tomatoes and white wine

Known as Spaghetti Vongole, this is my absolute favourite seafood dish, and after pizza, is the second thing I eat when I’m back in Naples. Serve with your favourite long pasta, and remember to mix the pasta in with the sauce, not the other way around!

Mixed Seafood sauce with garlic, parsley and chopped tomatoes

This is one of the most popular seafood dishes in Italy and the smell of prawns, squid, fish, mussels and clams sizzling in garlic immediately takes me back to the Bay of Naples! Serve with your favourite long pasta, mix the pasta in with the sauce, not the other way around and don’t sprinkle any cheese on top!
